The summer heat is on here with days in the 90s. That’s enough to make anyone want to turn off their stove or oven. I was browsing around the Internet, looking for new and interesting recipes when I found several salad recipes on Mother Nature Network. Two of the salads actually call for cooking, but the other 3 are no-cook varieties.
I’m particularly interested in the tomato-watermelon salad, as this is the second time in a week that I’ve seen a recipe call for tomatoes and watermelon in the same dish. I must try that combo out, as it is not More >
Lemonade For The 4th

What’s more traditional than lemonade for the 4th of July. Well, maybe watermelon could beat it out. Here are a couple refreshing lemonade recipes to try out this holiday season and throughout the summer.
Sucanat will give a different taste than white sugar, but if you’re used to it, or trying to eat healthier, give it a try. I don’t like the taste of white sugar anymore, so use Sucanat in everything I bake.
Traditional Lemonade
- 1 cup sugar (white or whole sugar like Sucanat)
- 1 cup water
- 1 cup lemon juice
- 3 to 4 cups cold water

My Favorite Breakfast Drink

One thing I found was that just water alone was not a good liquid. It made fruits taste bland and washed out. I found that if I replaced half the water with a 100% fruit juice, suddenly the drink came to life. I thought I had purchased white grape juice, but I managed to grab tangerine-orange drink instead. It seemed I’d made a major mistake, but it was one of those light bulb moments. It made delicious drinks. Here’s my favorite drink using the tangerine-orange drink as a base.

The Skinny On Pasta

Most of us just grab a bag of pasta off the shelf and head for the checkout. We don’t even look at the ingredients. We don’t have a clue how it’s processed. We just know the kids will eat it.

Delicious Spring Pea Soup

Wow, I just made this recipe and it is fantastic. Our garden is in full swing here and I just harvested a large bag of sugar snap peas. Since I love sugard snaps I didn’t want to chance any of them spoiling, so I decided to try something different. I like them best raw, so concocted this on the fly.
Sugar Snap Pea Soup
Ingredients
- 3 cups sugar snap peas (stems removed)
- 2 cups mild greens (lettuce, spinach, mizuna, etc.)
- 2 cups water
- ½ avocado
- 2 tsp fennel seed
- 1 ½ tsp salt
- 1 Tbsp coconut oil, raw virgin
- 1-2 tsp sweetener (optional)

Eating More Raw and Enjoying It

One of the ways that I’ve included more raw in my diet is to do a mix of cooked and raw. For instance I’ll make rice or pasta, which are cooked, but then top it with something raw. Below is an example of one of my hybrid dishes.
Sketti & Fresh Veggies
Serves: 4 Prep Time: 30 min
- Spaghetti
- 2 Tbsp. Olive oil
- 1’ piece ginger, minced
- 1-2 stalks celery, chopped
- ½ cup water
- 1 Tbsp. miso
- 2-3 cups chopped veggies: Tomatoes, red pepper, sunchokes, zucchinis, kale
- Toasted Sesame oil
- Tamari or soy sauce
- Shredded coconut
