When I became a vegetarian there weren’t a lot of good vegetarian cookbooks, plus most of them were for ovo-lacto vegetarians and I don’t eat eggs. For years I pined away, wishing I could make good muffins, cakes, pancakes, and the like. I tried all the egg replacers and found them to really be lacking. I did manage some decent treat using things like applesauce and yogurt, but sometimes I didn’t want their distinct flavors in what I was preparing.

Fantastic “Healthy” Cookies

Of course all cookies are a treat, but if you make them as healthy as possible you can give them out more freely. Whole sugars, such as Sucanat, have all the nutrients and minerals still intact. It’s still a sugar, but it is used by the body differently and doesn’t cause a loss of nutrients and minerals to process it, like white sugar does.

Keeping It Healthy Through The Holidays

During the holidays it’s a great temptations to fall off the bandwagon and try to make it up in the new year. However, with just a little bit of planning you can enjoy your holiday feasting without dismay when you step on the scale on January 1st.

You can make pumpkin pie from scratch. Just buy a pumpkin grown especially for that. They are usually small and sweeter than regular pumpkins.

Enjoying Some Fall Baked Goods

I am quite the cook. Or I guess that I would rather say the baker. See I’m not that into cooking, but I really love baking things. Cookies For Their Lunchbox

I just realized that it’s been quite awhile since I put a recipe in here. Hmm, let’s see what’s a good dish for this time of year. With returning to school in process, having a yummy, nutritious treat for their lunchbox or after school snack sounds like a good idea. Here’s a recipe for a super simple cookie, that’s very tasty.
Sunny Oat Cookies
- ½ cup peanut butter
- ½ cup honey
- ¼ tsp. salt (you can add it to taste)
- 1½ cups oats, rolled
- ½ cup sunflower seeds

I Scream, You Scream, We All Scream For Ice Cream!

Or do we? In the “olden days” there really wasn’t anything else to choose from. Oh, there was sherbet (no it’s not sherbert), but that wasn’t really considered “cool.”
Today there are a number of frozen summer treats to choose from.
- Ice Cream – the old standby. There’s egg based, custard or French style, and Philadelphia-style without eggs. Ice cream has to contain at least 10% milkfat.

Two Very Simple Strawberry Recipes

Dipped Strawberries
Ingredients
- Strawberries
- Plain yogurt or sour cream
- Sucanat
Wash and place strawberries in a bowl. Put yogurt in a bowl. Put Sucanat, or other whole sugar in another bowl.
To eat pick up a strawberry, dip in yogurt then in sweetener. Munch to your hearts content!
Yogurt with Strawberries and Blueberries
Ingredients
- Strawberries
- Blueberries
- Plain yogurt
- Sucanat
- Cinnamon or Chinese 5 Spice (opt)
- Vanilla extract (opt)
You can make this up a bowl at a time or mix all the ingredients in a larger bowl and serve it.
